The Japanese based their makes on shoyu the equivalent of soy sauce and they use them in sushi or sashimi foods. Chinese are good for their sweet and sour tasted sauces such as chilli sauce and oyster sauce. Asian types are famous for fish sauce made from fermented fish available in Thailand and Vietnam.
